Laz's tip: don't throw the water away, you can use it to make a dressing. Add a tadge of lemon and parlsey and the taste of fish sh*t from the bag will really bring out the flavour.

Prawns that you can buy in the shops are they classified as sushi

The answer is no. Sushi is a 'prepared dish' often with fish, often with rice. If you buy prawns or fish in a shop, you have one of the ingredients of sushi. You could prepare the prawns and then serve them as sushi. Sushi doesn't need a lot of preparation, by the way.
